Nestled in Colorado’s Rocky Mountains, Aspen is an exclusive year-round mountain escape, famous for its outdoor adventures. It is here that Betula calls home.
The restaurant is the latest collaboration between chef Laurent Cantineaux and architect and restaurateur Juan Carlos Pérez Febres, co-owners of Bonito, a restaurant in the French West Indies Island of St. Barth. Since its opening nine years ago, Bonito has been praised for its flavorful and honest cuisine, outstanding service, and welcoming chic interior—all making it a favorite spot for locals and jetsetters alike.
Betula recreates the relaxed Victorian-style that predominates in Aspen, albeit with a touch of modernity. Situated in the heart of Aspen, close to fashionable shops and iconic sites in town, Betula occupies a second-floor space that will afford guests a beautiful view of Ajax Mountain. The design and remodel, conceived and directed by Juan Carlos, features both indoor and outdoor dining areas totaling 130 seats with a bar-lounge. The ambiance is unpretentious: friendly and cozy, yet chic—like being at home with friends.
The restaurant offers chef Laurent’s innovative French Pan-American cuisine, which combines French techniques with his experience cooking in the Americas for more than twenty years. A native of Paris, Laurent has worked with talented chefs including Guy Savoy in Paris, Michel Troisgros in Roanne, and Daniel Boulud in New York—all owners of Michelin-starred restaurants. This experience has been the foundation of his gastronomic knowledge and professional work ethic and has motivated him, with Juan Carlos, to open and manage successful restaurants in Caracas, Miami, and St. Barth.
